For the days, when we run out of tomato sauce or we’re sick of eating it all the time, I’ve created a perfect yellow pizza. Even some picky eaters in our house liked it’s full and delicious taste. This recipe is also full of vitamins, fiber and does not include any added oil. 🙂
400g pizza dough (I used a bought spelt pizza dough)
1 small head of yellow cauliflower
1 small onion
3 garlic cloves
spices: vegetable stock cube, nutmeg, salt
Tbsp of corn starch
red bell pepper
spices: thyme, basil, sweet red pepper
Some cooked sliced potatoes also work great as a topping.
Chop up the cauliflower and boil it until soft for about 15 minutes in half a litre of water with one vegetable stock cube. Sauté the onions and garlic on water in the meanwhile. Drain the cauliflower and save 1 cup of the vegetable stock. Blend cauliflower, onion and garlic and add nutmeg and salt. Combine a cup of vegetable stock and corn starch, thicken it in a pan and then stir it in the cauliflower mixture.
Spread the yummy cauliflower sauce over the pizza dough, add the toppings and sprinkle some thyme, basil and sweet red pepper on top. Nutritional yeast works well, if we want to achieve a more cheesy taste. Bake for 15 minutes on 200°C.
